Diego Pardo runs Cumbre Roja at 1,900 m near Planadas. Once part of Colombia’s conflict zone, his farm now stands for peace and persistence. His Castillo beans are fully washed, sun-dried, and cupped at 85+. “The mountain tests us,” Diego says, “but the cup rewards us.”
