Ana María López

 At 2,100 m near Buesaco, Ana María López cultivates Volcán Azul. Her family’s farm faces the Galeras volcano, where ash enriches the soil. Her Pink Bourbon beans are hand-sorted and sun-dried on raised beds. “The volcano gives us fear,” she smiles, “and flavor.”
